Graduation & Gluten Free

I officially picked up my graduation cap and gown on Monday!!!!! It feels so close and is coming so fast! All I have left is finals week. Naturally I’ve been more stressed lately, and it caused a major pressure headache the other day, it hurt like hell, which made me realize I need to get back into my yoga practice.

So that’s the update with graduation and now there’s another factor that is changing my life, I’m going gluten free. At least for a little bit. I don’t have celiacs disease (or at least don’t believe I do, I haven’t gotten examined by a doctor for it) but I am tired all the time, even after getting a good nights sleep. I figured I would try going gluten free to see if it makes a difference in the way I feel. Last night was the first gluten free night and my roommate Maria made a really good meal, chicken with white beans, tomatoes, and feta cheese. It was really, really good!! I’ll post the recipe with pictures next time I make it. For tonight’s lunch I made a quinoa black bean and avocado wrap (with a GF wrap of course), I put a little bit too much avocado, it overpowered the whole taste but overall it was really good.

Tonight’s dinner was GF Pad Thai! And since I work at a cookie bakery, and it’s really hard for me to resist eating cookies/cookie dough every day, I decided to try making some GF peanut butter chocolate chip cookies (which are my current favorite at work). This way when I start craving cookies while at work, I can still eat one and stick to the GF diet. All four of these recipes will be up soon, with many more to follow.

St. Party’s day and Graduation

I’ve been a bit of a slacker with the blogging, I’ve been super busy with school and work. Since St. Patrick’s day is Monday I am planning on making some delicious cookies for the occasion! Triple Chocolate Guinness and Sugar Cookies with a Royal Baileys Icing! So look forward to those recipes to come!

As for graduation and it’s right around the corner and I’m freaking out a little! I have ordered invitations for my party and they have officially arrived, I just need to send them out. The stressful part is trying to figure out what I’ll be doing with my life after graduation. I have been looking for jobs to send my résumé out but I haven’t actually sent any out yet because I don’t know what I should do. I have lived in Orlando my whole life and I am ready to get out! I love Boston and I would love to live there (or Massachusetts in general) one day, and I wouldn’t mind living in other states. My current lease isn’t up until October. So the dilemma…….. Do I immediately apply for out of state jobs and hope that if I get one I can find someone to sublease my current place, or do I stay with my current job at a cookie bakery or look for a local professional job until my lease is up and then move out of state?

Moving out of state also requires moving expenses I have to save up for (I already have a good chunk in savings). I’m hoping that once I talk to my Aunt I’ll have some good parental guidance on what the better decision would be for my life.

Growing up!

My friend Lesline is graduating Nursing school and asked me if I would make cookies for her graduation party! I was so excited for her to graduate and I was excited that she asked! She found a picture online of what she wanted the cookies to look like, they were scrubs and hearts with a life line. I used my sugar cookies recipe that I used for my halloween cookies.

I was really happy with how they turned out!


Lesline was so excited about them and they were a hit at her graduation party!

I can’t wait until I graduate in May!


Countdown To Graduation

Hooray! I’m a Senior at the University of Central Florida, an Event Management major, and I have less than a year left. Before the summer started, thinking about graduation made me anxious because I didn’t feel I was prepared enough to be out of school and in the professional world. Now I’m an intern at Mobella Events and although I’ve only been with them for two months I feel more confident that I am finally learning the things I need to to be fully ready for graduation. Here are the accounts of my life, what I am learning along the way and all the little things in between such as my dog (Henry), my baking, and decorating the house.

How did you prepare for life after college?
